Instructions
- Preheat and Prepare Shrimp: Place a rack in the center of your oven and preheat the oven to 400 degrees F. Put the shrimp in a large mixing bowl, drizzle with olive oil, then sprinkle with chili powder, cumin, smoked paprika, and kosher salt. Toss to coat evenly.

- Make Guacamole Mixture: In a small bowl, combine the prepared guacamole with fresh lime juice and 1 tablespoon of chopped cilantro, mixing well.
- Assemble Bites: On each bite-sized corn tortilla chip, spoon a portion of the guacamole mixture, then top with one roasted shrimp.
- Garnish and Serve: Sprinkle additional fresh cilantro and crumbled feta cheese or queso fresco over the assembled bites. Serve at room temperature.
