Description

These Healthy Protein Chocolate Covered Cookie Dough Bites combine creamy cottage cheese, almond flour, and vanilla protein powder into a thick, satisfying dough, then are coated in rich dark chocolate for a guilt-free, protein-packed treat that's perfect for snacking or dessert.

Ingredients

Scale

Cookie Dough

  • 1 cup cottage cheese
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 3/4 cup almond flour
  • 1 1/2 scoops vanilla protein powder
  • 2 tbsp mini dark chocolate chips

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Blend Base: In a food processor or blender, combine the cottage cheese, maple syrup, and vanilla extract. Blend until smooth and creamy to form the cookie dough base.
  2. Mix Dry Ingredients: Transfer the blended mixture to a medium bowl. Add almond flour and vanilla protein powder, mixing thoroughly until the dough is thick and resembles cookie dough consistency.
  3. Fold in Chocolate Chips: Gently fold the mini dark chocolate chips into the dough ensuring even distribution.
  4. Shape and Chill: Portion the dough into mini muffin liners placed in a mini muffin pan. Freeze for about 1 hour to allow the bites to firm up.
  5. Melt Chocolate: In a microwave-safe bowl, melt the dark chocolate chips with coconut oil by heating in 30-second intervals, stirring between each until smooth.
  6. Coat Bites: Using a fork, dip each chilled cookie dough bite into the melted chocolate until fully coated. Place coated bites on a lined baking sheet. Optionally sprinkle flaky sea salt on top.
  7. Set Chocolate: Return the baking sheet with coated bites to the freezer for 15-20 minutes until the chocolate hardens. Enjoy these protein-packed treats afterward.

Notes

  • Use full-fat or low-fat cottage cheese based on preference, but full-fat contributes to creaminess.
  • Maple syrup can be substituted with honey or agave nectar if desired.
  • Vanilla protein powder adds flavor and protein; a plant-based powder can be used for vegan variations.
  • Mini muffin liners help keep the bites uniform and easy to serve.
  • Store the cookie dough bites frozen for best texture and freshness.
  • For a crunchier coating, add finely chopped nuts or seeds to the melted chocolate before dipping.
  • Flaky sea salt enhances the chocolate flavor but is optional.
