  • 1 tablespoon granulated sugar
  • 2 ¼ teaspoons active dry yeast (or one packet)
  • 2 tablespoons honey

  • 1 large egg (at room temperature)
  • 3 ¾ cups all-purpose flour (plus more as needed)
  • 4 tablespoons unsalted butter (at room temperature, cut into cubes)

Instructions

  1. Activate yeast: Place the warm milk in the bowl of a stand mixer or a large bowl if mixing by hand. Add the granulated sugar and sprinkle the yeast over the milk. Whisk gently to combine, then let sit for 5-10 minutes until the yeast foams and bubbles.
  2. Mix wet ingredients: Add the honey, salt, and egg to the yeast mixture and mix gently until combined.
  3. Add flour and butter: Add 3 ¾ cups of flour and mix on low speed with the paddle attachment until mostly incorporated. Add the butter cubes and continue mixing on low speed until butter is incorporated.
  4. Knead the dough: Switch to the dough hook and knead on low speed until the dough is smooth and slightly sticky, about 8 minutes. Add flour 1 tablespoon at a time if too sticky, avoiding over-flouring to keep rolls light and fluffy.
  5. First rise: Transfer dough to a large lightly oiled bowl, turning once to coat with oil. Cover with a kitchen towel or plastic wrap and let rise in a warm place for 1 hour or until doubled in size.
  6. Prepare baking dish: Grease a 13x9-inch rectangular baking dish with cooking spray or butter.
  7. Shape rolls: Turn dough onto a floured surface and knead a few times by hand. Cut the dough into 24 equal pieces by dividing into 3 pieces, then each into 8 pieces. Shape each into a ball and place in the baking dish.
  8. Second rise: Cover the rolls and let them rise for 30 minutes until puffy.
