Ingredients
Scale
Potatoes and Seasoning
- 2 lb Yukon Gold Potatoes
- 2 Tablespoons Kosher Salt
- 1/2 teaspoon Baking Soda
Cooking and Flavoring
- 2 1/2 Tablespoon Vegetable Oil
- 2 Cloves Garlic (minced)
- 2 Tablespoons Fresh Rosemary (or a combination of herbs)
- 1 Tablespoon Butter
- 2 Tablespoons Fresh Parsley (chopped)
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for roasting the potatoes.
- Prepare Potatoes: Peel if desired, then cut the Yukon Gold potatoes into even chunks to ensure uniform cooking.
- Boil Potatoes: In a large pot, bring water to a boil and add baking soda and 1 tablespoon of kosher salt. Add the potatoes and parboil for about 10-15 minutes until the edges start to soften but the potatoes remain firm inside.
- Drain and Roughen: Drain the potatoes well and shake them in the colander to rough up the edges, which helps create a crispy texture when roasted.
- Season and Oil: In a large bowl, toss the potatoes with vegetable oil, minced garlic, rosemary, and remaining salt to evenly coat with flavor and oil.
- Roast Potatoes: Spread the potatoes evenly on a baking sheet lined with parchment paper or a roasting pan. Place in the preheated oven and roast for 60 minutes, turning halfway through, until crispy and golden brown.
- Add Butter and Parsley: In the last 5 minutes of roasting, dot the potatoes with butter to melt over them and sprinkle chopped fresh parsley for added freshness and color.
- Serve: Remove from the oven and serve hot alongside your favorite main dishes such as steak or turkey.
Notes
- Yukon Gold potatoes are preferred for their creamy texture and ability to get crispy edges.
- Boiling with baking soda helps to break down the potato surface for extra crispiness when roasted.
- Use fresh herbs like rosemary and parsley for the best flavor, but dried herbs can be substituted if necessary.
- For a richer taste, add more butter or drizzle with additional olive oil before serving.
- These potatoes are perfect for holiday meals or as a flavorful everyday side dish.
