Ingredients
Scale
For the Potatoes:
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 lb baby red and yellow potatoes, cut into 1/2 inch cubes
- 3 large garlic cloves, minced
- 1 teaspoon fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
For the Steak:
- 1 1/4 lb sirloin steak, cut into one-inch cubes
- Salt and pepper to taste
- 1/2 tablespoon olive oil
- 1 tablespoon butter
Instructions
- Prep Potatoes: Heat a skillet over medium heat and melt 1 tablespoon of butter with 1/2 tablespoon of olive oil. Add the cubed potatoes, minced garlic, fresh parsley, thyme, rosemary, and red pepper flakes. Cook for 6 minutes until potatoes are tender but still firm. Season with salt and pepper to taste. Remove the potatoes from the skillet and set aside.
- Cook Steak: Discard any burnt garlic and herbs from the skillet. Increase the heat to high and add the remaining 1/2 tablespoon olive oil and 1 tablespoon butter. Add the sirloin steak cubes and sear for 6 minutes, stirring occasionally, until the steak is browned on all sides and cooked to your desired level of doneness. Season with salt and pepper.
- Combine and Serve: Return the cooked potatoes to the skillet with the steak. Cook together for 1 minute until heated through and well combined. Serve the garlic butter steak bites hot for best flavor.
Notes
- Make sure not to overcrowd the skillet when cooking the steak to ensure it sears properly and develops a nice crust.
- Adjust the amount of red pepper flakes to suit your preferred spice level.
- Use fresh herbs for the best flavor, but dried herbs can be substituted with about one-third the quantity.
- For a slightly creamier texture, you can add a splash of heavy cream when combining potatoes and steak.
- Let the steak rest briefly after cooking if you prefer more tender bites before combining with potatoes.
