Steak Bites

  • 1 tablespoon olive oil
  • pound sirloin steak (cut into bite size pieces, or strip loin, tenderloin, strip steak or rib eye)
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon pepper (or to taste)

Garlic Butter Sauce

  • 2 tablespoons butter (unsalted)
  • 4 cloves garlic (minced)
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon parsley (fresh, chopped)


Instructions

  1. Heat the oil: Add the olive oil to a large skillet and heat it over high heat until hot.
  2. Cook steak pieces: Add the steak pieces to the hot skillet and season generously with salt and pepper. Cook without stirring for at least 2 minutes to get a good sear, then stir and continue cooking for another 2 minutes until golden brown. Cook in batches if needed to avoid overcrowding.
  3. Prepare garlic butter: Transfer steak bites to a plate. In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and red pepper flakes, cooking and stirring for about 30 seconds until the garlic is aromatic and begins to brown.
  4. Toss and garnish: Pour the garlic butter over the steak bites in the skillet, toss to coat evenly, then garnish with fresh chopped parsley and serve promptly.

Notes

  • Make sure the olive oil is very hot before adding the steak to achieve a perfect sear.
  • Cook the steak in batches if your skillet isn’t large enough to avoid steaming instead of searing.
