Hot Honey Sauce

Chicken and Seasoning
- 2 x 250g (9 oz) chicken breasts, sliced horizontally to make 4 pieces
- 2 tsp paprika
- 1 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
Coating
- 35 g (1/4 cup) plain flour
- 2 eggs, beaten
- 65 g (1 cup) panko breadcrumbs
For Cooking and Topping
- 6-8 tbsp vegetable oil (for frying)
- 200 g (7 oz) feta cheese, crumbled
Instructions
- Prepare Hot Honey Sauce: Combine honey, hot sauce, and chili flakes in a microwave-safe bowl and warm for about 20 seconds. Stir well and leave to cool so the flavors infuse. Alternatively, heat gently on the stove until just simmering, then remove and cool.
- Slice Chicken: Horizontally slice each chicken breast through the center to create 4 even-sized pieces.
- Mix Seasonings: In a small bowl or pot, combine paprika, salt, onion powder, garlic powder, dried oregano, cayenne pepper, and black pepper to form the seasoning mix.
- Set Up Breading Station: Arrange three shallow dishes: first with plain flour mixed with half the seasoning mix, second with beaten eggs, and third with panko breadcrumbs combined with the remaining seasoning.
- Coat Chicken: Dredge each chicken piece first in the seasoned flour, then dip into beaten eggs, and finally coat thoroughly with the seasoned panko breadcrumbs. Place coated chicken on a tray.
- Heat Oil and Fry: Heat enough vegetable oil in a large frying pan over medium-high heat to cover the base. Once the oil is hot enough that a breadcrumb sizzles upon contact, carefully fry the chicken pieces in batches if needed. Cook for 3-4 minutes on each side until golden brown, crispy, and cooked through. Drain on a wire rack placed over a tray.
- Add Feta and Grill: Generously cover the fried chicken pieces with crumbled feta cheese. Place under a hot grill until the feta melts, becomes soft, slightly buttery, and begins to turn golden on top.
- Serve: Drizzle each serving with your preferred amount of the prepared hot honey sauce. Serve immediately and store leftover honey in the refrigerator tightly sealed.
