- 1 egg, lightly beaten
- 1 cup panko bread crumbs
- 2 tablespoons oil (divided)

Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit and pour 1 tablespoon of oil onto a sheet tray or baking dish, spreading it evenly. Set aside to prepare the avocado fries.
- Prepare Avocado Slices: If desired, squeeze fresh lime juice over the avocado slices to keep them from browning. Season the slices evenly with salt and pepper to enhance flavor.
- Bread the Avocados: Dredge each avocado slice in flour, shaking off excess. Then dip into the lightly beaten egg, making sure each slice is coated. Finally, press slices into the panko bread crumbs thoroughly to ensure a crispy coating.
- Arrange on Tray: Place the breaded avocado slices in a single layer on the greased baking tray. Drizzle the remaining tablespoon of oil evenly over the slices or spray with cooking spray to promote crispness while baking.
