Instructions

  1. Prepare Parsnips: Peel and chop the parsnips into even pieces to ensure uniform cooking. Place them in a pot along with the thyme sprigs and cover with water. Bring to a boil and cook for 20 minutes or until the parsnips are tender when pierced with a fork.
  2. Roast Garlic: While the parsnips cook, wrap the garlic cloves in foil and bake in the oven at 180°C (350°F) for 15 minutes to soften them and bring out their natural sweetness.
  3. Drain and Dry: Once parsnips are cooked, drain them well and allow them to steam dry for a few minutes to remove excess moisture, which helps to achieve a smoother puree.
  4. Blend Puree: Use a stick blender to mash the parsnips thoroughly. Add the roasted garlic, butter, double cream, parmesan, brandy, nutmeg, cinnamon, salt, and white pepper. Blend again until the mixture is smooth and creamy.
  5. Optional Sieve: For an ultra-smooth texture, press the puree through a fine sieve before serving. Serve with a drizzle of melted butter, some fresh thyme sprigs, and a sprinkle of torn parsley for garnish.
