- Cook the onion and chicken: Heat olive oil in a large oven-proof skillet over medium heat. Add the chopped onion and cubed chicken. Cook for about 5 minutes until the chicken begins to brown and is no longer pink. Season with salt and black pepper to taste. Stir in minced garlic and cook for another 30 seconds until fragrant.
- Add the rice and liquids: Stir in the uncooked rice, cream of chicken soup, and 2 cups of chicken broth. If needed, add more chicken broth later to ensure the rice cooks fully.
- Cook the rice: Bring the mixture to a boil. Then reduce the heat to medium-low, cover, and simmer for about 15 minutes, stirring occasionally, until the rice is fully cooked. Taste and adjust seasoning if necessary.
- Finish with broccoli and cheese: Stir in the broccoli florets and half of the cheddar cheese. Continue cooking for 2 more minutes, allowing the broccoli to soften slightly. Sprinkle the remaining cheese on top and place the skillet under the broiler for a couple of minutes until the cheese melts and starts to brown lightly.
- Garnish and serve: Remove the skillet from the oven, garnish with fresh chopped parsley, and serve hot.
