Instructions

  1. Marinate the Beef: Add thinly sliced beef to a resealable bag with cornstarch, soy sauce, rice vinegar, beaten egg white, sesame oil, diced garlic, and grated ginger. Mix well so the beef is evenly coated. Refrigerate for at least 20 minutes to tenderize and infuse flavor.
  2. Cook the Beef: Heat a large skillet over medium-high heat with a generous drizzle of vegetable oil. When hot, add the beef slices and cook for one minute on each side until browned but not overcooked. Remove cooked beef to a plate lined with paper towels. Cook in batches if needed to avoid overcrowding.
  3. Sauté the Vegetables: Add another drizzle of vegetable oil to the same pan. Sauté the chopped white onion for 1-2 minutes until translucent. Add the bok choy and cook for 2-3 minutes until tender but still crisp.
  4. Combine and Serve: Return the cooked beef to the skillet with the vegetables. Add oyster sauce, light soy sauce, and granulated sugar.
